In Season: Garlic Scapes

Head down to the Hester Street fair this weekend and grab some Garlic Scapes before their season comes to a close in a couple weeks. Available at the Rachel Mae Farmstand on their own or as part of their CSA share, these curling tops of garlic plants come pre-seasoned with pungent garlic flavor. The farmstand’s own Rachel McGrath suggests using them in a pesto, pickling them, or sautéing them in butter and adding them to cheddar cheese grits. And here’s a good tip: keep them in fresh water on the counter and they’ll last for up to two weeks.
