FOOD + DESIGN: NEW YORK'S NOUVEAU FOOD HALLS
Until recently, New York City food aficionados used to have to buy a plane ticket to experience the incomparable delicacies and endless options that exist at classic international food halls. Now food halls seem to be popping up as frequently as food trucks, on a much grander scale, leaving us diners hungry for more.
The popularity of the Food Hall is not solely based on the food but also on the aesthetic and design. Top designers from across the country have targeted this gourmand culture and have built and created these Food Halls to entice and inspire. Adam Farmerie, Partner at the design firm AvroKO, along with Christopher Jaskiewicz, Chief Operating Officer of Gotham Organization, Inc., will speak about their recent development of Gotham West, as well as a few other under-the-radar projects in development; Renowned designer, Jeffrey Beers, will speak about his work designing the Plaza Food Hall, along with Kristin Franzese, Executive Vice President of Retail at The Plaza Hotel/The Plaza Brand. The conversation will be moderated by Stacy Rauen, Editor-in-Chief of HD Magazine.

Stacy Shoemaker Rauen is a well-respected and talented editor and writer, and is the editor in chief for Hospitality Design (HD) magazine, the leading publication for the industry. Besides overseeing the content and direction of the magazine, Rauen is a noted speaker at industry events, and as an avid tracker of trends, places, projects, and people, she puts together panels at HD's conferences, and has been quoted in various respected media outlets including CNBC and the Washington Post. She is also the founder of HD's CitySCENE, a networking event series held in metropolitan areas throughout the U.S. and internationally, meant to connect design professionals in each market, as well as NextGen Forum, a conference for the next generation of hospitality design leaders. She holds two degrees from Northwestern University's Medill School of Journalism, including a master's in journalism, and is the president of the New York chapter of NEWH—the Hospitality Industry Network.
AvroKO is an award-winning, New York-headquartered design and concept firm headed by four partners: Greg Bradshaw, Adam Farmerie, William Harris, and Kristina O'Neal. Founded in 2000, AvroKO has specialized in a variety of disciplines, including interiors, architecture, furniture, fashion, and graphic design. They also own and operate their own restaurants, including Double Crown, Madam Geneva, PUBLIC, and The Monday Room. AvroKO is currently at work on restaurants, lounges, hotels, residential developments and retail spaces worldwide.
Christopher Jaskiewicz is Chief Operating Officer of Gotham Organization, Inc. Gotham develops, builds, owns and operates distinctive real estate properties and also owns Gotham Construction Company, one of the oldest and largest builders in the northeast. Chris joined Gotham in 2003.
Chris is responsible for the operations of Gotham’s portfolio of approximately three million square feet of residential and retail properties. He also leads retail and commercial leasing and was the executive in charge of developing Gotham West Market. For Gotham’s construction division, Chris leads contract negotiations with Owners and provides executive support to project teams as necessary during construction. For Gotham’s development division, Chris supports the group's acquisitions and development of projects. Chris’s corporate duties include working closely with company executives on human resource, strategy, business development, strategy, risk management, and public relations matters, and leading the company’s consulting practice, dispute resolution and crisis control.
Chris previously represented Gotham as an associate in the New York office of Proskauer Rose LLP where he worked from 1999 to 2003 on mergers, acquisitions and transactions in the technology, hospitality, and real estate industries. He also litigated matters involving entertainment, franchises, employee raiding, trade secrets, and professional sports issues. Prior to law school, he worked two years as a PepsiCo District Manager managing 10 sales representatives.
Chris is currently Co-Chairman of the Greater New York City Construction Users Council, has been named a New York Real Estate “Executive of the Month,” served as a fundraiser for the March of Dimes, president of the Florida State University Alumni Association of New York, and founder of its 9/11 Scholarship. Chris received a law degree from St. John’s where he was on the Dean’s List, a B.S. from FSU, and he studied international business at the American University of Paris.
Jeffrey Beers is Founder and CEO of Jeffrey Beers International (JBI). Beers has built a stellar career on creating distinctive and visionary spaces recognized for their lasting appeal. While an architecture student at the Rhode Island School of Design, Jeffrey Beers studied with renowned glass artist Dale Chihuly. After graduating, Beers traveled to Brazil on a Fulbright scholarship with a goal of investigating how the arts and architecture could have a more symbiotic relationship. In Brazil, he worked in the office of legendary architect Oscar Niemeyer. Upon returning to New York, Beers accepted a position as a Project Architect with I.M. Pei & Partners, where he managed hotel and entertainment properties throughout the world. In 1986, he founded his own firm, Jeffrey Beers International.
Since then, the award-winning studio has received recognition for its outstanding hospitality design as well as Beers’ ability to unite artistry and strategy to create highly successful spaces, from hotels, restaurants, and nightclubs to retail outlets, residences, and offices. Beers is the recipient of four Gold Key Awards for design excellence, Contract magazine’s Interior Design Award, Interior Design’s “Best of Year” finalist Design Award, and was inducted into Hospitality Design’s Platinum Circle in 2000.
In her various roles, Kristin Franzese is responsible for retail operations at The Plaza, the iconic New York hotel, and also manages all aspects related to marketing, public relations and advertising for The Plaza brand. In addition, she serves as managing partner for The Plaza’s “house” brands: The Plaza Boutique, “Eloise” and The Plaza Food Hall by Todd English.
Joining the hotel in 2009, Kristin is fully immersed in every facet of The Plaza brand – from lease negotiations and acquisition of retail tenants, to management of all operations of the public and private retail spaces at The Plaza, as well as product licensing, sourcing and development of The Plaza “house” brands.
Among Kristin’s many successes: she defined and implemented the first-ever brand standards for The Plaza, ensuring that tenants and hotel management adhere to a five-diamond, five-star standard. She also developed the Eloise-at-the-Plaza concept, a first of its kind, 2,000-square-foot retail experience as well as The Eloise Suite in partnership with Betsey Johnson. Most notably, Kristin, along with Todd English and Jeffrey Beers, conceived and built The Plaza Food Hall, a multi-phase re-development of the concourse level of the hotel, turning it into a vibrant culinary experience unlike any other in New York.
Before joining El Ad, Kristin held various positions at Vera Wang. During her six-year tenure, her roles included senior director of ecommerce and retail; director of licensing and marketing; and general manager for the Madison flagship. Her vast retail experience also includes serving in high-level positions at Amsale and Saks Fifth Avenue.
Kristin attended St. Lawrence University in Canton, N.Y. She has held various volunteer positions in youth sports, and the local chamber of commerce and is currently the President of the master condominium board of The Plaza.
